City Student Shines at Prestigious Burns Supper in New York City

Scotland’s culinary and cultural heritage took centre stage at the 30th Annual Burns Night Celebration in New York City, with a City of Glasgow College student playing a key role in the event’s success.

Charlton Russell, a second-year Professional Cookery student, was chosen to help prepare for the prestigious event hosted by the American-Scottish Foundation, who also sponsored his trip. Held in association with the University Club of New York, the celebration honours the life and legacy of Scotland’s national bard, Robert Burns. For Charlton, this was both a professional milestone and a chance to immerse himself in a unique industry experience.

Working alongside Gary MacLean, National Chef of Scotland, Charlton contributed to the creation of an exquisite menu featuring traditional Scottish delicacies, including the iconic haggis.

Charlton reflected, “Never in a million years would I have thought I’d be doing a Burns Dinner in New York, I’m still pinching myself it was such an amazing and valuable experience. I want to thank, Andy Cummings (Guidance Lecturer), Gary Maclean looking after me in New York and the College for providing this amazing opportunity for students like myself.”

The event commenced with fanfare as a piper led a grand procession of the chef, the orator, and whisky bearers presenting the haggis. Robbi Munro delivered Burns’ famous poem, “Address to a Haggis,” with passion before ceremonially slicing the haggis.

The Burns Supper is a celebration of Scotland’s cultural heritage and global influence. For Charlton, it was an opportunity to represent Scotland and display his exceptional talent supported by our College training.

Gary McLean praised Charlton’s efforts, saying, “A special highlight of the night was witnessing Charlton receive the inaugural Young Chef Wallace Award from the American Scottish Foundation. This well-deserved recognition celebrates his passion, hard work, and dedication to the craft. It is inspiring to see young talent being recognised on such an international stage—well done, Charlton!”

Charlton’s journey was made possible through a partnership between the City of Glasgow College and the American-Scottish Foundation, reflecting a commitment to promoting Scotland’s culinary excellence globally. This is a testament to the power of education, culture, and tradition in connecting Scotland to the world while highlighting the next generation poised to carry these traditions forward.
