Overview

Immerse yourself in the vibrant flavours and techniques of Thai cooking in this comprehensive short course, where you'll learn to prepare and cook nine exquisite Thai dishes. This course covers the essentials of creating authentic Thai pastes—including green, red, and Massaman—equipping you with foundational skills to bring the essence of Southeast Asian cuisine into your kitchen. 

Each session offers a hands-on cooking experience, where you will create a variety of iconic Thai dishes, carefully crafted to balance the distinctive flavours of sweet, spicy, sour, and savoury. Dishes include King Prawn Green Curry paired with Wok-Fried Greens, Chicken Satay served alongside a refreshing Green Bean and Coconut Salad, and Thai Fish Cakes complemented by Sweet Chilli Sauce, Cucumber, and Peanut Salad. 

With step-by-step guidance from our chef lecturer, you'll uncover the techniques and ingredients that give Thai cuisine its amazing flavour and character. This course is a great chance to boost your cooking skills while also learning about the cultural stories behind each dish. 

Week 1 will include a demonstration thereafter, each week your lecturer will hand out a recipe, which will provide your list of ingredients you need to buy for the following week. 

You’ll complete nine weeks of demonstration led cookery lessons, creating items such as Thai beef salad, red curry baked fish with wok fried greens and massaman curry paste.

Materials

All equipment is provided. You will be required to bring your ingredients with you after week 1. You will need containers to take your products home in. 

Dress code

Wear suitable comfortable clothing and footwear for the kitchen or bakery along with an apron to protect your clothes and bring a tea towel.
