Overview
This course is delivered over two days per week enabling you to fit learning around work commitments and your individual lifestyle.
The SVQ Food and Beverage Operations course incorporates SVQ Level 2 Hospitality Services to enhance your technical skills and underpinning knowledge in all aspects of food and beverage service enabling you to grasp the opportunities to progress quickly within the hospitality Industry - Hospitality Rising Careers. This course is suitable if you are already working in the hospitality industry with no formal qualifications in this area.
The course focuses on work-based learning in both Scholars' Training Restaurant and The Bistro, providing the benefit of gaining a nationally recognised SVQ qualification with some underpinning knowledge within a class-based environment to support the SVQ units and NQ qualification.
Our assessors regularly monitor your progress and development through to the completion of your qualification. This ensures you develop your skills, helping you to become a valuable asset to employers, and enabling career progression within the hospitality industry.
The national standards for this award are set by People 1st and are accredited by SQA.
Entry requirements
Minimum entry requirements
- Three national 4 qualifications including English.
- Applicants will have or be encouraged to seek employment.
Additional selection requirements
- You'll be invited for a group and/or individual interview where you can find out more about the course and tell us why you're interested in this subject area.
- A good understanding of the hospitality industry would be an advantage but is not essential.
ESOL entry requirements
Applicants whose first language is not English should have minimum SQA ESOL National 5 or equivalent for NC/NQ courses and ESOL Higher or equivalent for HNC/D courses.
What you study
The SVQ framework is made up of ten units - four mandatory core units and six optional units. The subjects include:-
- Skills practice in food service.
- Beverage service and customer care.
- Workplace health and safety.
- Food safety.
- Standards of behaviour in hospitality.
- Team working.
The course is taught over two days per week with the majority of the learning and practice completed in our commercially operated Scholars Restaurant and our Bistro. You will be taught and guided by our lecturing team to develop service skills required for a wide range of service styles including - café service, small plates, formal lunch service, afternoon tea, Barista, cocktail, wine and drinks service.
After the course
Careers
You will be able to secure a permanent role or career progression within a variety of hospitality establishments, working front of house, food service or bar operations. This could include hotels, restaurants, bars, nightclubs and corporate or event catering.

Continuing Study
You may wish to continue your studies by undertaking a full-time course at Level 6 – Hotel, Restaurant and Bar Operations.
Teaching
Assessment methods
Assessment is through observational assessment, completion of questions banks and the process of reflective practice. You will create a portfolio of evidence to prove that you have the appropriate knowledge and understanding to carry out food and beverage service in the workplace including cafes, bars, restaurants, and hotels. In addition, there will be class-based and home-based assessments for the NQ element of the qualification.

Materials
You should have access to an IT device.
Dress code
You will be provided with a uniform to wear whilst learning in Scholars' Training Restaurant and Bistro. This consists of a purple shirt, tie, black trousers and a grey apron. Students are expected to wear black socks and comfortable black shoes.
