    The HNC in Bakery aims to provide you with all the skills and knowledge required to gain a senior position in the wholesale or artisan bakery and cake decorating industry.

    A wide range of practical subjects are taught including complex batch dough production, fermented and non-fermented products and wedding cake design, all of which are delivered in our fully equipped practical bakeries.

    In addition, a range of theoretical subjects are incorporated to underpin a wider understanding, and which may assist you if you chose to set up your own business.

    Entry requirements

    Minimum entry requirements

    • NQ Bakery Level 6; OR
    • Other equivalent qualifications or experience.

    Additional selection requirements

    You'll be invited for a group and/or individual interview where you can find out more about the course and tell us why you're interested in this subject area or we'll make an offer based on your application form.

    ESOL entry requirements

    Applicants whose first language is not English should have minimum SQA ESOL National 5 or equivalent for NC/NQ courses and ESOL Higher or equivalent for HNC/D courses.

    • Designing and Creating Wedding Cakes.
    • Design and Develop Individual Specialist Flour Confectionery Products.
    • Design and Develop individual Fermented Dough Based Products.
    • Sugar Flower Corsage production.
    • Intermediate Food Hygiene.
    • Financial Control Systems.

    Teaching

    How the course is taught

    The course is taught in our state-of-the-art practical bakeries, using specialist industry standard equipment. Our professional bakery lecturers will assist and support you throughout the course to achieve all desired outcomes and develop your ideas to successfully achieve employment within this exciting sector. 

    Theory subjects may be taught on campus or online.

    • Practical classes through completed checklist and portfolio completion
    • Open and Closed book assessments 
    • Graded unit project

    Additional Information

    Materials

    You will be required to purchase some small equipment which will aide your practical subjects.  Guidance will be given at pre-entry sessions and also throughout the course when required. 

    Dress code

    PPE for this course is not provided and professional Bakery Whites are required in practical areas. Guidance can be given on where best to purchase at any stage of the application process.
